Steamed Mini Pandan Cake

I’ve also recently tried a steam pandan cake, using the recipe from the book I had bought on steam cakes.  I had realised that the recipe is very very similar to what Happy Flour had posted.  I would encourage everyone to try this as it is indeed very tasty.

Recipe:

 Ingredients:

 (A)   3 eggs, 150g Caster Sugar, 1tsp Ovalette

(B)   150g self-raising flour, 100ml thick coconut milk, 1tbsp pandan juice, few drops of vanilla essence (I used pandan essence instead, but can also be omitted entirely if you prefer)

 Method:

  1. Mix well pandan juice, essence and the coconut milk.
  2. Preheat steamer.  You can add few pandan leaves in the water used for steaming.  This adds more  fragrance to the cakes.
  3. Whisk (A) till light & fluffy.  I used medium speed of my mixer.
  4. Gradually fold in flour, alternate with coconut milk.  Be careful not to deflate the egg mixture too much & do not overmix.  (I used the lowest speed of my mixer when mixing this).
  5. When done, I used the spatula to give a few quick light stir just to ensure the flour and egg mixture are well incorporated.  Stroke from bottom up.
  6. Spoon mixture into small moulds (you may line with paper cups if you wish) till about 80% full each. 
  7. Steam in steamer over high heat for 8-10 minutes till done.
  8. Remove from mould and leave to cool before serving.

Hi, just wondering which brand of coconut milk did you use? The one I use has thin coconut milk not thick. Thanks.
